Corn Salsa

This is called salsa, but it’s eaten as a side.  I make this often in the summer, as it goes great with burgers or whatever else you happen to be grilling.  This also pairs excellently with East Indian, Middle Eastern and Tex Mex foods.

1-341 ml can corn, drained
2 plum tomatoes, diced
1 green onion, sliced
1 small handful cilantro, chopped
½ red pepper, diced
Juice of 1 to 2 limes, depending on juiciness
Black pepper to taste

Combine all ingredients, cover, and chill.  Can be made several hours ahead.
